Espresso Bar/Kitchen Closing List

• Wipe all counters down in the kitchen area
• Help gather any dishes (if dishwasher hasn’t made their rounds yet)
• Turn off soup well (30 minutes prior to close)
• Flip soup pan and get cooling with the soup paddle
• Breakdown and clean slicer (if needed)
• Gather barista dishes (10 minutes prior to close)
• Wipe espresso bar down
• Wipe cafe tables
• Close gate (2 pm or 4 p.m.)
• Dump air pot(s) and rinse if any excess grounds, fill up with hot water (as long as the pot is empty you can ‘brew’ a full batch into the urn)
• Dump sanitizer buckets
• Breakdown and clean espresso machine
• Countdown drawer, write down credit card tips on time cards
• Sweep/mop

Some of these things are interchangeable so please help one another where you can
