BOH/Dish Closing

• Gather dishes from kitchen and cafe area
• Wrap line and put away everything on the left side
• Collect board from line, wash and sanitize
• Drain dish machine and make sure it’s free of debris (inside and out)
• Make sure sinks are clean and free of debris
• Wipe down back tables
• Trash/Recycling
• Sweep/Mop
• Please check all chemicals are stocked, especially the dish detergent for the dish machine and sanitizer
• dump old coffee & fill um w/ hot water

Turn off when finished plz
