Opening Duties
- Turn on and fill up the dishwasher
- Set up the line (grab the board and stock the line)
- Turn on soup well and fill with water (if needed)
- Turn on big oven
- Drain airpot
- Brew (1) full pot, dealers choice 18g
- Set up espresso bar (season machine, time out grinder and machine as needed) *Try morning shot and make sure it’s not too sour or bitter)
- Set up (2) sanitizer buckets (one for kitchen, one for espresso bar)
- Set up cash drawer, please recount and make sure you start with $200
- Check bakery stock and bake as needed
- ½ & ½
- Whipped cream
- Headset on by 9 a.m.
- Turn on grab n go cooler
- Open gate
The Kati Method Starts by walking in the back door and turning on the light:
- → As you walk in, grab the cutting board from the triple sink and walk it into the kitchen and install onto the low boy.
- → Pull the two butters out and set on the shelf to come to room temp.
- → Grab a soup bowl and fill with water. Fill the soup well with approximately that much (if there is leftover, roughly accounting for volume), turn the dial to ten.
- → Take the soup bain out of the low boy (or prep from the back if it was pulled from the freezer)
