Pickled Veg
Ingredients
- ½ yellow onion, thinly sliced
- 1 bell pepper thinly sliced
8oz red wine vinegar
- 10oz white wine vinegar
- 6oz water
- 1 tea bag “pickled veg seasoning”
- 3 star anise
- 4 cloves garlic
Handwritten notes:
- “not enough - just sav[ory]”
- “I got coriander seed or all together”
- “toss all together”
Instructions
Add onion, peppers and star anise to a jar. Boil vinegars. Add tea bag of seasoning to jar and pour vinegar mix into jar. Let jar sit uncovered til cooled. Refrigerate!
Pickled Veg Seasoning
1tbsp salt
other white organic
- ½tbsp coriander
- 1tsp fennel
- ½ tsp mustard seed
- ½ tsp celery seed
- 1 tsp crushed peppercorn
- 1tsp dill

- 10 Tbl coriander Seed
- 20 tsp fennel Seed
- 10 tsp mustard Seed
- 10 tsp Celery Seed
- 20 tsp Pepper corn
- 20 tsp dill
