Sweet Potato Lentil Stew
- Heat ¼ c. oil on high in soup pot
- Chop (bite size) and add, in this order:
- 1 Red Onion
- 1 Bunch Celery
- 2 Large Sweet Potatoes
- 1 Large Carrot
- 13 Cloves Garlic
- Add Veg Broth until pot is ¾ full
- Cook on high 1 hour or until sweet potatoes and carrots are softened
- Add lentils ← 8 oz (½ bag)
- Season
- 6 bay leaves
- 1 TB garlic salt seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1 tea ball green peppercorns
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp coriander
- ¼ tsp turmeric
- ½ tsp Lemon juice
- 1 tsp thyme
- Reduce heat to hold temp, 2 or 3
