Black Bean Soup
- Heat ΒΌ c. oil on high in the soup pot
- Chop (bite size) and add, in this order:
1 Red Onion
1 Bunch Celery
2 Large Carrots
2 Large peppers or 6 small peppers
18 Cloves Garlic
- Strain, rinse thoroughly, and add 3 cans of black beans #3.5F
- Add 2 cans of tomatoes with chiles, with juice
- Add 1 can of sweet corn, with juice
- Add veg broth until the pot is full
- Season: 2 TB lime juice
- 2 TB cilantro
- 1 TB taco seasoning
- 1 tsp garlic salt seasoning
- 1 tsp black pepper
- 1 tsp salt
