Black Bean Soup

• Heat ¼ c. oil on high in the soup pot
• Chop (bite size) and add, in this order:

1 Red Onion

1 Bunch Celery

2 Large Carrots

2 Large peppers or 6 small peppers

18 Cloves Garlic

• Strain, rinse thoroughly, and add 3 cans of black beans #3.5F
• Add 2 cans of tomatoes with chiles, with juice
• Add 1 can of sweet corn, with juice
• Add veg broth until the pot is full
• Season: 2 TB lime juice
  • 2 TB cilantro
  • 1 TB taco seasoning
  • 1 tsp garlic salt seasoning
  • 1 tsp black pepper
  • 1 tsp salt
