Breakfast Sandwiches

makes 9 eggs

EGGS: Use one egg per silicone mold=one egg per sandwich you want to make. Break eggs into glass measure pitcher. For each 2 c. of eggs add ¼ c. of heavy cream, 1 tsp. salt and 1 tsp. pepper

Use deep baking pans, try not to crowd molds so hot water can surround each one

Spray silicone molds with Pam

Distribute egg mixture evenly between molds

Place tray in oven, pour 2 c. hot water from hot water tap on brewer into bottom of tray to surround silicone molds

Bake at 325* for 12 min

Drain water immediately upon pulling from oven to stop baking process

BACON: Line deeper baking tray with wax paper, lay out bacon flat without any overlap, try to avoid touching pieces for more even baking

Bake at 325* for 12 min, rotate and drain grease, 12 min other side or until crispy

ASSEMBLE: Use sparing aioli on each side of asiago bagel, each sandwich gets 1 ½ pieces bacon or 1 piece turkey sausage, one egg, and one piece of cheese. Date for 7 days, counting today.
