Clean Tables + Coffee Bar
Closing Checklist
About an hour before close
- Wipe down back wall
- Clean blender cover
- Make sure everything is well stocked for the morning- check all paper products, teas, and powders
- Wipe down front of ice bin and dishwasher
- Sweep and mop
- Throw away newspapers
- Take out trash
- Dishes—blender pitchers, milk pitchers, sanitizer buckets, dish utensils, espresso utensils, baking sheets, scone tongs should all be run through the dishwasher every day
- Clean mixing spoons with soap
At close
- Lock all doors, turn off open sign
- Count drawer and close POS, put deposit and drawer in locked cabinet
- Turn off lights in back and put down gate
- Cafiza espresso machine, clean drain tray, clean brew heads & porta-filter
- Turn off lights and music
- Throw out old coffee
Lock Back Door
Handwritten notes
- Wipe down soap, use ice paddle - put in fridge
- Check & dates in case, record & toss waste
- Adjust thermostat: 74° in summer, 68° in winter
- Vacuum rugs
